Ok, this one is so easy, your going to love it.
Take a handful of kale, rinsed and pulled from the ribs. Add 1/2 of a peeled and cored pineapple and its juice (or use 1/2 a can of chucks in natural juice. Toss in a couple of ice cubes. Blend it with your boat motor, and enjoy.
Really, that's it. I know, simple, easy and delicious. So good.
Lets Talk About Breakfast
Like most people these days, I am trying to reduce the amount of processed foods in my diet. So this finds me in a constant search for things to temp my taste buds with. This past week, I was trying to find something new for breakfast. I came across several recipes using quinoa. I was intrigued, as I often use this tasty grain as a side dish.
Some of the recipes ha good ideas, some just didn't appeal to me at all. So I mixed and I matched and I came up with, what I like to call...
"Banana Almond Quinoa Yumminess"1/2 cup quinoa
1 banana, sliced
8 almonds
1/8-1/4 cup coconut
honey to taste (I used about 1 tbs.)
almond milk (I confess, I used vanilla flavored)
Prepare the quinoa according to the package. Put it in your bowl. Slice up the banana and stick that in there.
While the quinoa is cooking, toast your almonds and coconut in a dry skillet until the coconut is an irresistible golden brown. Keep it moving, it changes color quickly. When its toasted, toss that on top.
Drizzle the whole thing with honey, top it with your almond milk and go to town. The recipe serves one. This was delicious, and very satisfying. No mid morning snacking for me that day. Nutritionally speaking, per serving it breaks down like this:

It is also an excellent source of protein, fiber, iron and calcium. My calculations are a little high, as I accounted for my vanilla almond milk and sweetened coconut. But, the fats are healthy and the high fiber content helps with the carbs. To me, it was worth it. I enjoyed my breakfast, I felt full, I had great energy all day and look how gorgeous it looked!
